This is a device that allows the whey produced during the manufacturing of hard and semi-hard cheeses to be boiled and transformed into whey cheese. Its steam-heated design, hygienic stainless steel body, and efficient filtration system aim to recover valuable proteins in the whey at maximum levels.

Working Principle & Technical Specifications

  1. Heating and Boiling of Whey

    • The whey is raised to high temperatures in a controlled manner using steam applied to the tank’s walls.

    • During this process, proteins such as albumin and globulin precipitate and separate from the liquid.

  2. Filtration & Whey Cheese Production Process

    • After the boiling process is completed, the resulting whey curd is transferred to filtration/pressing trays to be completely separated from the liquid phase.

    • This process ensures that the whey cheese achieves a better consistency and that the moisture level is at an ideal level.
