The average roll bread dough and rolling capacity is 11,000 pieces per hour. A maximum of 11,000 pieces of hamburger and pastry dough, and an average of 7,500 pieces/hour capacity for bagel and sandwich dough are processed. Since very little flour is used in dough cutting, the dough surface is flour-free and provides a clean working environment. The amount of flour given to the cut doughs can be adjusted. During the dough cutting process, the lubrication system is automatically adjusted. The pressureless cutting does not damage the dough.

Intermediate Resting Section

This section is used for short-term fermentation to facilitate the shaping of products. It allows for easier processing of the doughs cut and rolled according to weight. The 6 doughs (or 8) that come oval from the cutting section are reduced to 3 (or 4 in the 8-piece cut) at the exit of the resting section. Depending on factors such as the climate in which the machine will operate, the environment, and the weight of the dough to be cut, the number of dough carrying baskets will be determined according to the demand for resting time. Each basket contains 6 dough carrying baskets. The baskets are made of food-safe, cleanable material (polymer). The resting time depends on the speed of the cutting machine. The number of baskets is determined according to the resting time. The average time is set to 5 minutes. For longer times, the number of baskets is increased to accommodate the desired time. In cases where resting is not considered, direct passage of the doughs that would obstruct the cutting section is made using the existing direct conveyor under the resting section. It is used when bagel and sandwich products are to be taken.

Processing (Shaping) Section

This section of our machine includes a crushing band that performs the shaping and a shaping pillow with a sorting unit. Round shaping of the dough is done with the crushing band. Sandwich type (long) bread doughs are shaped with the shaping pillow. Adjusting the product sizes and shapes according to dough weight is very easy. Doughs in sandwich shape are taken into a single row to prevent them from going scattered on the spreading band. There is a klepe on the spreading to ensure the orderly arrangement of products on the tray or pan. All shaped doughs (3 pieces) are transferred to the spreading band at the same time. The operation of the machine is carried out by sensors with the PLC program. All materials used in the machine manufacturing comply with food regulations.

Spreading (Automatic Sorting to Tray-Pan)

Automatically settles to spread on the tray or pan. After spreading, it automatically exits. The spreading opening distance is adjusted via the screen. It automatically sorts the cut dough to the tray or pan of the desired size. Tray sizes must be pre-informed. The spreading size changes for non-standard trays. It performs automatic sorting for corrugated and flat trays with simple adjustments. If the pan or tray is not placed correctly, sorting does not occur, and a warning is given on the screen.

Note: Since there are pneumatic pistons on the machine, a minimum air pressure of 4 bar is required for the operation of the machine. A 5*2.5 multi-cable should be drawn for electricity. To prevent voltage fluctuations that may damage the automation products used in the machine, a suitable regulator is recommended.
